A classic Daiquiri

The classic Daiquiri is one of the "six basic drinks" in David A. Embury's influential cocktail book, The Fine Art of Mixing Drinks, and a sure-fire way to measure a bartender’s skill. The simple, three-ingredient formula makes it one of the most approachable cocktails to make, but requires just the right level of know-how to get the flavour balance and temperature right. Good quality, lightly aged white rum and fresh citrus juice are both musts, as is the horsepower to shake until well-chilled. Recipes can vary due to the desired level of sweetness you want to achive, but the goal is to bring sweet and sour into perfect balance.

50ml top-quality light aged white rum, such as Plantation 3 Stars

30ml freshly-squeezed lime juice

10ml simple syrup (or to taste)

Lime wheel to garnish (optional)

METHOD

  1.  Chill a coupe or Nick and Nora glass until frosty. 

  2. Combine ingredients in a cocktail shaker, fill with ice, then seal and  shake vigorously until well-chilled. Strain into chillled glass through a fine strainer and serve with a lime wheel to garnish.
