
Chilled corn soup with crab meat

A chilled soup is perfect for hot weather entertaining, and corn has only a short summer season, so make the most of it. Add crab meat to create something quite luxe.
2 tbsp olive oil
2 golden shallots, finely chopped
6 corn cobs, husks removed
1 litre good-quality chicken stock
Picked crab meat, basil leaves and extra-virgin olive oil, to serve
1. Heat butter and oil in a saucepan over medium heat. Add shallot and stir occasionally until shallots is very tender, but not browned. Add corn and stock and bring to a simmer, then reduce heat to low and simmer until corn is tender (20 minutes). Season to taste and blend with a hand-held blender, then season to taste and refrigerate to chill.
3. Serve soup topped with crab meat, basil and a drizzle of extra-virgin olive oil.
