Wildflower beer and honey glaze for Christmas ham

You have the ham ordered, now time for the glaze. It’s the finishing touches to a festive meal that make it even more special. Here’s one glaze that we love for Christmas that uses beer and honey for a beautiful fragrant flourish, cooked until sticky and caramelised - you won’t believe how easy it is, you’ll never look back.
375 ml wildflower beer
2 cups brown sugar
½ cup honey
Juice and peeled rind of 1 orange
2 tsp cloves
3-4 bay leaves
1. Combine all ingredients in a saucepan and bring to a boil, stirring until sugar is dissolved. Simmer the glaze for 2 minutes over high heat to combine, then remove from heat and set aside.
2. To glaze your ham, preheat an oven to 200C. Brush a layer of glaze over the ham to start the process, then glaze every 5-10 minutes to build up the glaze, until all the glaze is used, then continue to cook, basting the ham with the glaze and juices that accumulate in the base of the pan, until a nice glaze forms – it’s ok to get it nice and sticky and caramelised, the little crunchy bits are the best.
3. Serve the ham, with some of the pan-glaze juices for spooning over.
